If you buy trout from a Helsinki supermarket, more likely than not, it was grown from egg to plate in a recirculating aquaculture systems (RAS) facility. Finnforel recently expanded its capacity to 3,000 metric tons a year, meaning two suppliers in the Scandinavian country — Finnforel and Fifax — account for almost half of global installed supply of trout grown in RAS. Here’s a fun fact, if Atlantic Sapphire converted all its tanks to trout, the fish would be a bigger species than Atlantic salmon in the RAS grow-out industry. Many of the leading producers are not close to hitting nameplate capacity.
